Golden Delights Serves 4 This is a camping recipe - but it adapts to a microwave wonderfully! Being a camping recipe, it is generous with its servings. ^_^ Taken from "Simple Foods for the Pack" by Axcell, Cooke and Kinmont 1 cup of whole wheat flour 2 teaspoons baking powder 1 1/2 teaspoons dried orange peel handful of golden raisins or diced apricots 3 tablespoons oil or butter 1/3 cup of honey 1 egg an orange or 8 apricot halves 2 tablespoons honey or golden syrup or jam Combine the dry ingredients and the raisins in a zip-locking plastic bag. Pour the honey and oil into a plastic bottle. To avoid possible spills put the bottle in another zip-locking plastic bag. Carry the egg and the orange or apricot halves separately. In Camp: Add 3 tablespoons of water to the oil or butter and honey. Add the dry ingredients with the egg and mix well. If you took an orange, slice it thinly. In an oiled medium size pot place thin slices of orange, with the skin on, or the apricot halves. Pour on the honey, golden syrup, or jam. Put the puddding batter on top of this and cover with a tight fitting lid (tied on) or foil. Steam for 30-40 minutes, or 7 to 8 minutes in a microwave. The pudding should be springy to the touch. Don't burn yourself.
